Rhian Jones, founder of Conscious Eating, carefully selected the University of Westminster for her training in nutritional therapy because of its flagship status within the profession. University of Westminster prides itself on the high scientific content of its nutritional therapy degree course and the high standard of teaching.

Training included modules in biochemistry, phytochemistry, anatomy, physiology, applied physiology, applied pathophysiology, pharmacology and differential diagnosis. This is in addition to the many food and nutrition related modules.

Training in phytochemistry gives the Westminster trained nutritional therapist a unique understanding of the full diversity of food rather than just the vitamin and mineral components and they therefore are able to use food for its full therapeutic value
